この多くの犬種のほとんどは、人間の手によって品種改良されて出来上がったものなのです。

すべてのイヌ（イエイヌ）は、オオカミ Canis lupus の亜種である Canis lupus familiaris に属する（古い分類では、種Canis familiaris とされていた）。したがって、人間によって作り出されたさまざまなイヌの品種（犬種）は、すべてイエイヌという亜種（ないし種）の中の、亜種よりさらに下位の分類階層である変種に過ぎない。ただし、同一亜種としては他に例を見ないほど、犬種間における形質差・多様性は著しい。世界のさまざまな地域の在来種や絶滅した犬種まで含めると、犬種の数は約700-800とも数千ともいわれる。なお、イエイヌを亜種ではなく、オオカミとは独立した種とみなす古い分類では、それぞれの犬種は亜種とされていた。

犬種の一部は、決まった容姿や特質を世代を超えて維持・強化するために、ブリーダーや愛好家、犬種クラブ等によって「犬種標準」（スタンダード）が定められている。繁殖はその標準に沿うように進められ、これを証明するための血統書が発行されたりする。また、異なるブリーダーやクラブによって特定の性質が強化される中で犬種が分化することがある。更に、既存の犬種を意図的に交雑させて新しい犬種を作出することも盛んに行われる。これらの「犬種」には一部のブリーダーやクラブ、販売業者が主張するだけの小規模なものもあるが、一定の飼育頭数を得て犬種が確立されると、さまざまな畜犬団体に登録を申請し、認定されることで権威を得るものもある。登録されている犬種やその標準、分類等は団体によって異なるが、例えば2015年1月現在、国際畜犬連盟（Fédération Cynologique Internationale、略称：FCI）では、343犬種を公認し、これらを生存目的や形態によって、10のグループに分けている。日本のジャパンケネルクラブ (JKC) では、FCI公認犬種のうち194犬種を公認・登録し、分類もFCIにあわせているが、ヨーロッパ、アメリカ、オーストラリア等の主要ケネルクラブでは、ケネルクラブ独自の分類を定めるものも多く、例えばアメリカンケネルクラブでは7グループに分けている。この中には、歴史的経緯等によって、ほとんど同一の犬種が団体によって別の名前で登録されている場合もある（アメリカン・ピット・ブル・テリアとアメリカン・スタッフォードシャー・テリア等）。
