I titolari di Pancacao iniziano la loro avventura nel 1996 con il primo panificio artigianale di Bereguardo Pavia dove il giovane Wilson un ragazzo di 21 anni e la sua giovane moglie Katia di 18 anni entrano a far parte di un mondo fantastico ovvero la produzione di pane pizze e focacce. Rilevano così in quel piccolo paesino di provincia una rivendita di pane, che a suo tempo era stata per tre generazioni un'attività di produzione artigianale, rimettendo in questo modo in moto un laboratorio ormai da tempo fermo, riscoprendo i valori di una tradizione che andava perdendosi.

Dopo il successo dei primi anni i due giovani ragazzi iniziarono a produrre molta pasticceria ed essendo così costretti ad ampliarsi aprirono così la pasticceria gelateria castello proprio di fronte al castello di Bereguardo. I molti clienti che arrivavano da Pavia hanno portato questi due giovani con gli anni ad aprire un laboratorio di produzione a San Martino Siccomario in via Madonna 17.
