Dari hasil penelitian tersebut, hanya Jamur Tiram dan Shitake yang telah memenuhi syarat kandungan beta-glucan yang mudah untuk diencerkan kembali. Beta-glucan merupakan salah satu komponen penyusun dinding sel jamur. Komponen lainnya meliputi mannoprotein, chitin, plasma membrane dan glycoprotein.
Dalam berbagai literatur, disebutkan bahwa jamur pangan memiliki berbagai manfaat kesehatan yang antara lain untuk anti-kanker, anti-virus, anti-diabetes, anti-kolesterol, dan mampu meningkatkan stamina dan kebugaran tubuh.
Dalam jamur juga terdapat kandungan asam glutamat yang dapat meningkatkan aroma dan cita rasa masakan.
