If there were a theme to the 2014-15 culinary calendar, it would be the rise of the small bar as food leader. No-one could have foreseen this when small bar licences were passed into law by the WA Parliament eight years ago. But much of what is interesting and innovative in food isn’t coming from the big name white-glove establishments, it’s flowing forth from the unfettered creativity of our small bar chefs. While not a new phenomenon in other parts of Australia, Perth stands alone in its food leadership in bars. In Sydney and Melbourne, for instance, the cutting edge of food is still mainly evolving in restaurants, not bars. In Perth, Darlings Supper Club, Lot Twenty, Pleased To Meet You, Swings Taphouse, Old Faithful Bar & BBQ, Morries Anytime and The Cabin are rocking a new aesthetic in accessible, fun, share-style food with bold flavours and brave flavour combinations. Much of it is the sort of food chefs cook for each other – so-called dude food.
