Indeks glikemiczny (IG), zwany także wskaźnikiem glikemicznym, jest to tabela zawierająca informację o tym, w jakim stopniu wzrośnie stężenie glukozy we krwi po spożyciu określonego produktu żywnościowego. Według definicji z 1998 roku, stworzonej przez Światową Organizację Zdrowia, indeks glikemiczny jest to "pole pod krzywą glikemii po spożyciu 50 g węglowodanów posiłku testowego w porównaniu do efektu posiłku standardowego (glukozy lub białego chleba)".
